Brick Oven Pizza
Belzano's brick oven pizza is made from old world Italian recipes using only the freshest ingredients, aromatic herbs and then perfectly cooked in specialty ovens. Our dough is made using a complex recipe and process called "Biga." Biga is a lengthy process carried out over several days. The ingredients are double zero flour, Italian sea salt, Italian extra virgin olive oil and baker's yeast. The result is a more flavorful pizza that is also more digestible than any other pizza you've ever had. This recipe was taught to us by the most respected and decorated pizza maker in all of Italy, Graziano Bertuzzo of Caorle, Italy. It is a guarded technique only known and executed by two of our most trusted Belzano kitchen staffers.
